

We use the fresh mango pulp to make the beer. The mangoes used in our brewery is a combination of Alphonso and Neelam – which is a Karnataka local mango breed. If the flavour is too mild, it can go at the end-stage like maturation and if the flavour is intense, it can go in fermentation. It also depends upon the intensity of the flavour of the fruit. The stages start with the brewing, fermentation and maturation.
